Strawberry Pecan Bread


I rarely post recipes on here, but this bread is just too amazing not to share. The recipe is a hybrid of several I found online. I used a bag of pecans from Texas and a pint of strawberries I picked up three hours earlier at the 14th & U St. farmers market.

Ingredients:
• 1 pint strawberries, sliced
• 2 eggs
• ¾ c. vegetable oil
• 1½ c. all-purpose flour
• 1 c. sugar
• 1 heaping tsp. cinnamon
• ½ tsp. baking soda
• ½ tsp. salt
• ¾ cup chopped pecans

Directions:
• Preheat oven to 350°.
• Grease and flour 9x5 inch loaf pan.
• In a mixing bowl, combine strawberries, eggs and oil; stir to mix well.
• In a mixing bowl, combine flour, sugar, cinnamon, baking soda, salt and pecans.
• Add strawberry mixture to dry ingredients and stir until blended.
• Pour into loaf pan. Bake for 1 hour, or until toothpick inserted in center comes out clean.
