Southern Readers?

I know I have some readers in the south (well more south than Washington), so please help me out. I'm going on a road trip in two weeks to Houston. Cities along our route are Roanoke, Knoxville, Chattanooga, Birmingham, Hattiesburg, Baton Rouge, New Orleans and Beaumont, and we're looking for interesting/fun/ridiculous things to do along the way. Suggestions? Send 'em along.
